Tasting Notes

A elegantly textured monster, unctuous and serious, silky and delicious. Four days on the skins plus some lightly toasted French oak that just cradles the lemon balm underbelly with vanilla and brioche. 

Full bodied. Dry. Decant for best results.

Vineyard 

Our consistently sourced Mercier vineyard is from an organically certified site on the west side of Oliver in the southern Okanagan Valley. 29yrs old planted on a fluvial bed of soils that were deposited during the last glacial period. They are mostly a deep brown colour and stoney with gravelly, sandy loams. 

Process

The grapes were hand harvested and destemmed before ambient wild yeast spontaneously started fermentation. The ferment was done in open top picking bins on skins for 4 days, very light cap wetting, minimal extraction. Due to a heavy smoke vintage we decided not to even press the skins after a tiny amount of smoke could be detected. We did some foot trodding and took the direct free run juice, only capturing enough for three barrels, one of which was new, lightly toasted French. They spent 9 months resting on heavy lees. We added 20ppm of SO2 post malolactic fermentation in the spring.
