Tasting Notes

Restrained aromatics of pithy lemon, yellow hard candies, underripe pear. The palate follows much of the same leaning into its citrus essence with green apple jolly ranchers. A textual mouthfeel with integrated soft tannin.

Light bodied. Dry/high acid.

Vineyard 

Heralding from a 15yr old certified organic vineyard in Osoyoos, southern Okanagan Valley. A very dry and hot site, sporting pretty much 100% sandy soils.

Process 

The fruit was destemmed into open top fermenters where they were aloud to ferment with their ambient wild yeast for a blend of 2, 6 and 12 days on skins. Gentle daily cap wetting for minimal extraction occurred. Each batch was individually pressed off and transferred into old neutral oak barrels to rest on their primary lees for 9 months. They were racked into steel prior to bottling. 20ppm SO2 added
